A billing profile bundles reusable billing settings: billing type, invoice consolidation, interval, and invoice texts. Open Case Management Setup → Billing Profiles.

Profile resolution (inheritance)
The profile applicable to a case is determined in this order:
Case → Engagement → Scope → Customer → default profile from general settings
The first profile found in this chain applies. This lets you set a default and override it only where needed.
